This cocoa powder is an excellent addition to any bakery. Cocoa powder is extracted from the cacao bean, and is a remaining dry substance that has a distinct, rich taste. Dutch-processed cocoa then goes one step further and is treated with an alkali to neutralize its acids. This process creates a rich, dark color and mild, subtle flavor that complements other baking ingredients. This product has 10-12% cocoa butter. Good to Know: Dutch-process cocoa powders are usually for recipes with baking powder as the primary leavening agent or in recipes that do not have a leavening ingredient, like hot chocolate, brownies, and chocolate pudding.
